Instructions
Step 1
Gently cook down chopped onion, celery and carrot in 1 tbsp olive oil and salt for 5 minutes.
Step 2
Add finely chopped mushrooms, courgette, red pepper and sweat down for another 5 minutes. Add the red wine and reduce until the alcohol burns off (3-4 mins).
Step 3
Brown off the meat in a pan and then add fresh chopped herbs, 1 tbsp garlic purée, black pepper.
Step 4
Add chopped tinned tomatoes, 200g passata and 1/2 tin of water. Add the stock cube, marmite and cook down for 30 mins. Taste and feel free to add a splash of soy sauce for salty umami.
Step 5
Serve with 60-70g of dry pasta per person. Finish with an optional grating of 15g parmesan.
