Step 1
In a frying pan bring the olive oil to heat. Add a pinch of salt, garlic and the fish. Season with white pepper and salt to taste. Aim for less than normal seasoning as the sauce reduction is savoury. Once the fish is throughly cooked both sides, add the wine and lemon juice simmer until the sauce is creamy. Serve with some grilled corn or white boil rice.
