Massaman Curry
1kgchuck steak
400mlcoconut milk
1 jarMassaman Curry paste
2potatoes

Instructions
Massaman Curry
Step 1
Cut beef into chunks and then sear until brown on both sides after seasoning with salt and pepper
Step 2
Fry off Curry paste for one min until aromatic
Step 3
Add coconut milk and mix to combine. Simmer to a boil
Step 4
Transfer beef and curry mixture to pressure cooker
Step 5
Set pressure cooker on Meat and High Pressure for 40 mins
Step 6
Then add chopped carrots and potatoes. Pressure cook for further 5-7 mins

Add flour if needed to thicken sauce

Combine flour, salt, sugar, egg, milk, water and a tbsp of oil into a stand mixer with k-beater setting

Knead dough for 8 mins by hand

Place dough in lightly oiled bowl for 20 mins and cover with damp tea towel

Roll dough onto bench and divide into equal parts. They should be approx 60-70g in weight

Roll each portion into round ball with smooth surface

Cover roti with vegetable oil. Make sure it is mostly saturated in oil

Cover bowl with plastic wrap and rest at room temperature for 1-24 hrs

Take one ball and flatten and roll into a thin large circle. Gently push the edges of the dough until the dough is paper thin

Lightly dab the top of the dough with oil. Then grab one end of the dough and lift it up so it becomes a long rope-like piece. Twirl rope into circular disk

Flatten roti into think disks
Step 18
Heat a large frypan and cook on each side (with butter)
Step 19
Clap roti by pushing it between hands
