2 x 8 ozcan tomato paste

1 Ccheddar cheese shredded

Instructions
Step 1
In a cast iron dutch oven pot, fry bacon to crisp. Remove, save and cool the bacon. Keep the bacon fat in the pot. Add the ground beef, sausages, onions, peppers, jalapenos and garlic to the pot, and brown. Once cooked, add the diced tomatoes, tomato sauce, chicken bouillon, hot water, honey and kidney beans. Bring the chili to a slow boil over medium heat, stirring a few times while heating up. Once heated, add the cayenne pepper, chili powder, cumin, oregano, coriander, black pepper and salt one at a time while stirring the chili. Add the cheddar cheese and stir until melted. Add the mesa to the chili to thicken (add more or less, for thicker or thinner chili). Stir and let cook over low heat for 1 1/2 hours, stirring occasionally. To serve, top with cheddar cheese, cooked bacon, sour cream or whatever you'd like. Corn bread makes a great addition!
