Step 1
Heat half of the cooking fat in the bottom of a skillet on medium heat. Add the onion and cook stirring for 8 minutes, add the garlic and ginger and cook, stirring until fragrant and onion is translucent. Remove from heat and let cool.
Step 2
When the onion mix has cooled, add it to a large bowl with the ground bison, thyme and salt. Gently nix with your hands until everything is well incorporated. Form into 1 1/2 inch meatballs (about 20 total).
Step 3
Add rest of the fat to skillet and bring to medium heat. Add the meatballs, brown for 3 minutes on one side, flip, and add the orange juice and coconut aminos. Cover and cook for 10 minutes, or until cooked through. Remove the meatballs from pan and set aside.
Step 4
Leave the remaining juices in the pan and turn up to medium-high heat. Let the sauce reduce to 1/2, about 5-10 minutes.
Step 5
For the sweet potato noodles: Using a vegetable peeler, peel the sweet potato into long, flat ribbons, Alternately, you could use a vegetable spiralizer.
Step 6
Heat half of the cooking fat on a skillet over medium-high heat, add half of the sweet potatoes. Let them cook undisturbed for 8-10 minutes but keep an eye to make sure they don't burn. Once golden browned flip and cook on other side for another 8-10 minutes until soft and crispy.
Continue with remaining noodles.
Step 7
To assemble:
Place a nest of crispy sweet potato noodles in a plate, lay meatballs and glaze them with orange sauce, sprinkle some fresh thyme. Enjoy!
