Crispy Bacon and Parmesan Frittata

Step 1
Preheat the grill to medium-high.
Step 2
Place the bacon on a grill rack and cook under the grill for 2 minutes on each side until crisp. Remove from the grill and roughly chop, then place on kitchen roll to drain.
Step 3
Melt the oil in an 18-20cm non-stick frying pan and add the spring onions. Stir and cook over a medium heat for 2-3 minutes. Set aside with the bacon.
Step 4
Season the eggs and add to the pan. Scatter over the spring onions, tomato and bacon.
Step 5
Cook over a low to medium heat for 6-8 minutes, or until the underside is almost set.
Step 6
Throw on the avocado and parmesan and place under the grill for 3-4 minutes, or until just set on the top.
Step 7
Remove from the grill and allow to stand for a few minutes. Cut into wedges and serve with a rocket salad.
