Ingredients

1.5yellow onions
medium, halved lengthwise and thinly sliced crosswise
1 ½ Tbspolive oil
½ Tbspunsalted butter
1 tspgarlic
minced
½ tspSalt
¼ tsppepper
¼ cupsherry
or dry white wine
½ Tbspfresh thyme leaves
½ Tbspparsley
fresh chopped
1 cupwater
2 cupsbeef broth
add more as pasta cooks
½ TbspWorcestershire sauce
6 ozlinguine
uncooked, broken in half
½ cupgrated parmesan cheese
½ cupGruyere cheese
grated, or Swiss
parsley
chopped, to serve
Instructions
Step 1
Place a large skillet over medium-high heat and add olive oil and butter. Add onions and cook for 15 minutes, stirring occasionally
Step 2
Stir in garlic, salt, & pepper; cook an additional 5 minutes, until onions have browned and are a jam-like texture. Stir in sherry and scrape the bottom of the skillet to remove any brown bits on the bottom
Step 3
Add water, beef broth, thyme leaves, parsley, and Worcestershire sauce. Add broken linguine and stir to incorporate pasta into the liquid. Bring to a boil and continue to boil for about 10 minutes, until pasta is cooked and most of the liquid is absorbed. Remove from heat and cover for 3 minutes
Step 4
Toss in grated Parmesan, Gruyere, garnish with parsley and serve.
