Step 1
1. Preheat oven to 450F degrees. Line 2 baking sheets with parchment paper.

2. In a bowl, add tomatoes, garlic, onions, salt, pepper and olive oil. Mix well. Spread evenly on baking sheets.

3. Roast for 30 minutes. Turn half way through. Broil on high for 3 minutes.

4. In a pot, heat chicken broth and bring to a boil over medium heat.
Step 5
5. Add roasted tomato mixture.
Step 6
6. Blend till smooth with an immersion or regular blender.
Step 7
7. Add heavy cream and chopped basil.
