Instructions
Step 1
Dice the onion and chop the garlic, add a splash of olive oil to the pan and fry the onions for 2 minutes until soft.
Step 2
Add the oregano and cumin seeds and stir constantly for 2 minutes.
Step 3
Add the tomato puree and Chipotle paste and stir constantly for 2 minutes.
Step 4
Add the chopped tomatoes, sugar and kidney beans and bring to the boil.
Step 5
Add the 500ml of stock and reduce heat, simmer for 10 to 15 minutes. To thicken the sauce add cornflour and water mixed in a bowl of a 1:2 ratio.
