Beef Tacos! Perfect for Taco Tuesday (or any day of the week for that matter) We love ours with a simple sour cream dressing & fresh salsa side. Throw in some Feta as it’s hard to find good Mexican cheese in the shops. Always hits the spot!

Instructions
Step 1
Prepare the salsa by finely dicing half the red onion, 2 tomatos & half the coriander. Mix in a bowl with salt & pepper and the juice of 1 lime
Step 2
Mix the sour cream with the other lime & set aside
Step 3
Fry the mince off until cooked & add half of the dry spices. Fry for a minute & remove to cold plate
Step 4
In the same pan add the garlic & rest of the onion and fry for a minute. Then add tomato purée & cook for another minute.
Step 5
Add half pint of water & chipotle paste & simmer
Step 6
Baste the tortillas one by one in the sauce
Step 7
Add meat to sauce & bring to temperature
Step 8
In a hot pan place tortillas flat & spoon mixture in to one half. Think half moon. Fry for 15 seconds & fold tortilla over. Do this for each one, be sure to work quickly so you don’t burn the tortilla
Step 9
Serve with sides & a scattering of the left over coriander. Enjoy!
