Instructions
Step 1
Heat the oil in a large stockpot or Dutch oven over medium heat. Add the onion, reduce the heat to medium-low, and cook until soft and lightly browned, about 5 minutes. Stir in the garlic and chili powder and cook until aromatic, about 15 sec.
Step 2
Add the chicken broth, raise the heat to high and bring to a boil. Reduce the heat to low and add 2 Tbs lime juice and the chicken. Partially cover and gently simmer until the chicken is no linger pink about 15 minutes.
Step 3
Use a slotted spoon to remove the chicken from the stock; cool slightly. Add the tomatoes to the stock and cook over medium heat until stock is very hot, about 5 minutes. With your hands, shred the chicken into bite-sized pieces.
Step 4
Put shredded chicken back into the pot and serve with cilantro, cheese, lime and tortilla chips
