540gwhite beans

Instructions
Step 1
For the pesto blanch the basil for 30 seconds. Immediately place in an ice bath and squeeze out the water. Blend all ingredients, gradually adding more olive oil until to get your desired consistency.
Step 2
For the beans sauté garlic and lemon zest in a little olive oil.
Step 3
Add in your beans together with a cup of the cooking liquid (if you cooked the beans yourself) or vegetable broth. Let it simmer until reduced.
Step 4
Add almond butter and season with salt and pepper to taste.
Step 5
Stir in the pesto into the creamy beans and enjoy with some flatbread or as a side!
