Fermented Garlic Sesame Hummus

Hummus is easily one of my favorite dips of all time! A smooth, savory Mediterranean bean dip, if you will. The best part is this recipe is concise, offers a lot of easy substitutes and comes together in less than 30 minutes. A "traditional" combination of ingredients with my own little twist on a few things. Hope you enjoy!

Instructions

Step 1
Start by boiling the garbanzo beans in 2 quarts of water with 1 teaspoon of baking soda for 10 to 15 minutes
Step 2
Strain the garbanzo beans and transfer to a food processor along with the remainder of the ingredients (not including the garnishes) and blend until very smooth (about 3-5 minutes)
Step 3
A few notes: (if your food processor allows it) you can blend everything together, not including the olive oil and water, and then use the opening provided through your appliance to slowly drizzle the olive oil in while the food processor is running. Then do the same with the chilled water to really smooth it out. Use your own judgement on the quantity of water you add to fit the consistency you desire
Step 4
The saffron salt I use is homemade by grinding saffron threads in a mortar and pestle then adding coarse salt and grinding it until smooth. You can easily just substitute regular salt. The fermented garlic and honey is my unique twist on this recipe. It's exactly what is sounds like, just fresh garlic cloves (peeled) and put into a jar with wildflower honey and let to sit in a dark, cool area for 15-30 days until fermented. I definitely like to add a little bit of the honey in as well, but not too much because you don't want sweetness overwhelming the flavor. This can also be easily substituted for fresh garlic or roasted garlic
Step 5
Transfer to a bowl, garnish with sprinkled paprika and white sesame seeds. Enjoy with your favorite edible dipping utensil! (Also great chilled!)
