Mediterranean Chickpea Salad - healthy life

not sure if it was the sauce or the cheese that wasn't for me. might give it another go later and update my review.

First time I made it with the chick peas and chicken it felt dry. Second time I added goat cheese and black olives (just my preference ( but the gist cheese made a world of difference. Put it on a pita with a bit of tzatziki and it was delicious!!

Tasty and fresh, I did replace the red wine vinegar with balsamic went prefect with it

Rescued the recipe using Wayback machine Chicken: 1. Season chicken on all sides with garlic powder. 2. In a medium skillet over medium heat, add oil. Once the oil is hot, add chicken and cook 8-10 minutes on each side, or until cooked through and no longer pink (165°F). Cooking times may vary depending on the size and thickness of the chicken breasts. Set aside and tent to keep warm. Salad: 1. In a large bowl, combine tomatoes, red onion, garlic, yellow pepper, parsley, chickpeas, and cucumber. 2. In a separate medium bowl, combine the dressing ingredients. Pour dressing over salad ingredients. 3. Cut chicken into bite-sized pieces and add to salad. Toss to combine. 4. Serve topped with feta cheese.

Added some Tahini, which was great

The instructions are not here but I just added everything in order. Changed to pomegranate vinegar and used air fried chicken. Served in the pepper, halved, with a mixed greens salad.

Swapped red wine vinegar with balsamic vinegar, tasted great

It was a lot of fun to make. All of the fresh ingredients went well together. Eat with pita bread or pita chips.

Delicious light meal. Its got alot of zing, so if you don't like that then reduce the amount of lemon and red wine vinegar you use.

I couldn't get instructions to load but researched a similar recipe. Made adjustments to my taste as I went along and what do ya know even my fussy boyfriend gobbled it up (added avo and crisped up the chickpeas before hand) also my camera sucks

Definitely did not follow the ratios because I was trying to use up all my produce but it was bussin

I didn't have parsley or red pepper flakes but this was still really tasty. I don't think my husband or kids liked it so I'll just make it for myself in the future, haha!

Made dish exactly as written, and it came out great. My guest loved it. Will definitely make this again.

I LOVE this salad. I added shrimp instead of chicken and oh my goodness. It’s so filling and yummy. This is a new add to my meal prep rotation!

Nice fresh salad, I made it without the chicken & used fresh garlic only.

Absolutely adore it! I omitted the peppers and air fried one big chicken breast at 375 for 16 min with balsamic vinegar, salt, pepper, and garlic powder.

Loved it. Lightly coated chickpeas with paprika , pepper and salt and airfried. Marinated chicken breast with balsamic vinegar and seasonings and airfried. Will be a regular will try a different dressing next time for more zing.

Chickpeas make it, might need to add abit more zest

Roasted the chickpeas and it came out great!!

I roasted the chickpeas, and also added some roasted seeds/nuts, i think it fit perfectly with the dish👌🏼 Can recommend!

Honestly thought it will be heartburn central… but it is so delicious!!!! I would add coriander instead of parsley if you are in to this to make it more zing!!!! I also put in the whole red onion in. Delicious!!!

Added honey to dressing. Will double chickpeas next time. So good!

A great summer meal. I bought grilled chicken breasts from the market’s pre-cooked section which made the meal prep even quicker!

This was so delicious! Fresh and light dinner for those hot summer nights🙂

Added pasta instead of chicken. Good without either, too.
