This Whole30 pizza recipe will be your new go-to during your whole30. It's made with a cauliflower crust and you can use as many compliant toppings as you wish! The pizza in the picture has roasted chicken, onion and bell peppers sautéed in avacado oil, vegan cheese, San Marzano tomatoes with garlic and basil and a bit of spring mix.

Instructions

Step 1
Line a large bowl with cheese cloth and set aside.
Step 2
Cook both bags of cauliflower rice according to the package instructions. Pour cauliflower rice on top of the cheese cloth and wait for it to cool a bit. Then, use both hands to press as much liquid out of the cauliflower rice as possible. If the cauliflower rice is too water-y, the crust will turn out mushy.
Step 3
Once the rice cauliflower is dry put in the food processor and pulse to bring to a ‘flour’ consistency.
Step 4
Pour dried cauliflower ‘flour’ into a separate bowl, then stir in the almond flour, seasoning and salt. Last, stir in the egg.
Step 5
Use your hands to form mixture into a ball, then knead and punch it. Place on parchment paper and press down on it, forming the dough into a circular crust. Put another piece of parchment paper on top and wrap in plastic wrap. Put in freezer for 3 hours up to 24 hours.
Step 6
Preheat oven to 425° and use a pizza stone (or line a large baking sheet with parchment paper). Take out pizza dough from the freezer and transfer it onto the pizza stone (or parchment-lined baking sheet). Brush the top of crust with olive (avocado) oil and bake crust by itself for 8 minutes. Then remove from oven, flip the crust, lightly brush other side with oil and bake crust by itself for another 7 minutes.
Step 7
Remove crust from the oven, then add your toppings! Start with the sauce, then add on your meat and veggies. Place pizza back in the oven and bake for 10 additional minutes.
Step 8
Remove pizza, wait a few minutes before slicing and serving.

NOTES: You can use whatever compliant toppings you want! Feel free to add more toppings and/or your own vegetables or meat--whatever your heart desires.
