Feta & Chilli Pesto Pasta Salad

This simple but delicious salad will take you from speedy weeknight suppers to relaxed Sunday lunches. If you're taking it on a picnic, layer up the pasta, rocket and pine nuts, then toss together at the last minute.

Instructions

Step 1
1 Put a large pan of salted water on to boil, then cook the pasta according to the pack instructions. Drain, reserving a mugful of the pasta water, then rinse under cold running water. Tip into a large mixing bowl.
Step 2
2 When cool, toss through the pesto, lemon zest and juice and the oil. If it feels a little dry, add a splash of the pasta water to loosen it; season. Toss through the roasted red peppers and 1/2 the feta. Spoon into your serving dish or container, then top with the rocket, remaining feta and the pine nuts. Tear over the basil leaves and toss together when ready to serve.
