Step 1
Preheat the oven to 220c. Chop the potatoes into 2cm wide wedges. Roughly chopped the chives and grate the cheese. Put the honey and sriracha in a small bowl and mix together. Set aside the glaze. Put the flour and cajun seasoning on a plate, season withnsalt and pepper and mix.
Step 2
Pop the wedges on a baking tray, drizzle oil, season with salt and pepper, then toss to coat. When the oven is hot, roast on the top shelf for 25-30 minutes. Halfvway through, sprinkle on the bacon and half the cheese. While the wedges cook, put half the sour cream in to a small bowl. Stir through the blue cheese, remaining cheese, water and 3quarters of the chives
Step 3
Put the remaining soured cream in a medium bowl and season with salt and pepper. Add the Coleslaw mix and stir to coat then set aside. Lay a chicken the spiced flour, then turn to evenly coat all over. Repeat with the remaining chicken.
Step 4
Heat a drizzle of oil in a large frying pan on medium heat. Once hot, lay the chicken thighs flat in a pan. Fry until browned on each side and cooked through. Around 13 to 15 minutes. Once cooked, remove from the pan. Pour in the glaze and evenly coat the chicken.
