Ingredients

Creamy Taco Salad Dressing
½ cupplain greek yogurt
½ cupsalsa
medium, canned
0.5juice of lime
¼ tspchili powder
¼ tspgarlic powder
¼ tspsalt
Vegetarian Taco Salad
3 cupsromaine lettuce
washed and chopped
½ cupblack beans
from a can, drained and rinsed
½ cupcorn
from a can, drained and rinsed
½ cupcherry tomatoes
cut in half
0.5avocado
diced
¼ cuppico de gallo
premade
2 Tbspcilantro
finely chopped
7tortilla chips
crunched up
1 ozcotija cheese
crumbled, or Mexican cheese blend, OPTIONAL
Instructions
Step 1
Prepare the taco salad dressing. Add all the dressing ingredients to a small blender. Blend until smooth and creamy. Set aside as you prepare the taco salad.
Step 2
Assemble the taco salad in a mixing bowl: chopped lettuce, black beans, corn, tomatoes, avocado, pico de gallo, cilantro, and crunched tortilla chips.
Step 3
Add a few tablespoons of taco salad dressing.
Step 4
Toss the salad together until everything is coated in the dressing.
Step 5
Serve right away.
