Ingredients

4 cupspumpkin
2carrots
large
1stalk celery
¼ cuponion
2cloves garlic
2 tablespoonsfresh ginger
¾ tspclove
4black cardamom pods
peeled and ground
5green cardamom pods
peeled and ground
chili flakes
or fresh hot pepper
Chipotle powder
or puree, to taste
1 tspsugar
1lime
juiced, and a wedge for garnish
heavy cream
optional
salt
to taste
pepper
to taste
Instructions
Step 1
Peel and cube pumpkin.
Medium to fine chop onion, carrot, and celery.
Mince garlic and ginger.
Prep your spices.
Step 2
Add onions to generous amount of heated oil in pan and saute until it begins to be golden. Then add minced ginger, and let it just begin to brown before adding cardomom and clove, then immediately add minced garlic, the carrot, celery, pumpkin, and a dash of salt to sweat down.
Step 3
Steam and stir occasionally until veggies are soft, add chili pepper or flakes, and sugar
Step 4
Add a cup or two of water (or broth), depending on your preference of thickness.
Bring to boil
Step 5
Puree with blender, then add lime juice, chipotle, splash of cream, and any final seasonings
