Step 1
Make the Homemade, Honey-wheat bread in advance

Preheat the oven to 400 degrees
Step 3
Add the cauliflower florets, onion, garlic and olive oil to a large Ziploc bag. Massage until well coated. Spread out onto a baking sheet lined with parchment paper and roast for 20 minutes.
Step 4
Spray a frying pan and place over medium heat. Add chopped bacon to the pan and cook until crispy. Remove from pan and set aside.
Step 5
Add roasted cauliflower and onions, chicken broth, mozzarella cheese, Greek yogurt, salt and pepper to a blender. Blend on high until smooth. Weigh the soup and divide the weight by four to get the amount needed for one serving.
Step 6
Top each serving of soup with one slice crumbled bacon and chives. Enjoy with homemade bread on the side.
