Beef Ragout
1.5 lbbeef chuck roast
shredded
4 ozUnsalted Butter
½ cflour
2 CBeef Stock
1yellow onion
chopped
½ cparsley
chopped
½ tspnutmeg
salt
to taste
pepper
to taste

Instructions
Step 1
Make start making a roux. Whisk in flour to melted butter in pan and toast until golden brown. Whisk in beef broth till roux is smooth
Step 2
Mix in onions, beef, parsley, nutmeg, salt, and pepper
Step 3
Place mixture in storage container and cool in refrigerator 4 hours to overnight
Step 4
Take cooled beef mixture and form meatballs (to desired size)
Step 5
Coat meatballs with flour
Step 6
Dip flour coated meatballs in to beaten eggs
Step 7
Coat meatballs in breadcrumb mixture
Step 8
Heat frying oil in deep pot or pan to 350F
Step 9
Fry breaded meatballs till golden brown (5-10 minutes)
