Step 1
Prepare the ingredients
Wash the rice before cooking it in rice cooker.
Dice the onion,garlic and sweet pepper. Slice the chilli's and rough chop the basil.
Mix the oyster sauce with the dark and light soy sauce add the tamarind paste and sugar then mix well.
Toast the pine nuts before crumbling them.
Step 2
In a wok over medium heat,add oil,onions and garlic and fry for 3 minutes then add the chilli's and cook for another minute. Turn the heat up and add the pork mince,break it up in the wak and toss until all is browned.
Step 3
Add the sauce mix to the mince. Mix until the sauce reduces to your desired thickness.
Step 4
Turn the heat off add the basil and stir it through before plating it next to the cooked rice and drizzle with any sauce that is left it the wok.
Step 5
Fry a egg in plenty of oil until crispy then place it on top of the rice. Sprinkle the pine nuts on the mince.
