Shrimp Scampi over Zucchini Noodles

Zucchini noodles are a great alternative to traditional pasta and are simple to make. Other possible replacements include carrot noodles (prepared the same way as the zucchini is) or spaghetti squash.

Instructions
Step 1
Using a vegetable spiralizer or julienne peeler, create thin noodles from the zucchini.
Step 2
In a large pan over medium heat, melt the butter.
Step 3
Add the garlic, and sauté until the garlic is lightly browned.
Step 4
Turn the heat up to high, and add the zucchini and shrimp.
Step 5
Using metal tongs, toss the zucchini and shrimp until the shrimp are fully cooked.
Step 6
Season with pepper.
Step 7
Remove the pan from the heat, and serve immediately.
