Pasta Primavera with Shrimp

Great American dish with lots of fresh vegetables and pasta! If you have picky kids (like I do) this dish is a great way for them to eat there vegetables. This could be a main dish perfectly by itself or made as a side paired perfectly with chicken or shrimp.

Step 1
Preheat over to 350F
Step 2
Bring a large pot of water to a boil and add salt, then add pasta and cook according to package.
Step 3
Chop vegetables and set aside.
Step 4
Bring 4 cups of milk to a low simmer and in a separate sauce pan add 1 stick of butter on medium heat.
Step 5
When butter is melted add 1 cup of flour and whisk till well combined and there aren’t anymore flour chunks. Pot of milk should be simmering at the same time.
Step 6
In the pot of milk you’re going to add 1 Tbsp each of garlic powder, onion powder and black pepper with 2 Tbsps each of oregano and Italian seasoning. Mix until well combined.
Step 7
Into the milk mixture add 1/2 cup of your choice of buffalo wing sauce. Mix until combined.
Step 8
Add your flour and butter mixture to the milk and stir. Make sure heat is medium so milk won’t burn the bottom of your pan.
Step 9
Slowly add about 2 to 3 cups of parmesan cheese and 1/2 of mozzarella cheese. Mix until think a semi thick sauce is made and leave on the lowest setting to keep warm.
Step 10
In a separate bowl season your clean deveined shrimp salt, black pepper and Italian seasoning to your liking. Add olive oil to small skillet and cook shrimp over medium high heat
Step 11
In a large skillet add about 2 to 3 tablespoons of olive oil and sauté vegetables on medium heat. When vegetables are done (4 to 5 minutes) in a large baking dish its time to combine all ingredients.
Step 12
Add sautéed vegetables, drained noodles, and sauce to baking dish mix well and add parmesan cheese to your liking over the top ( you can add additional mozzarella cheese to the top also)
Step 13
Bake in the oven for 5 to 7 minutes or until cheese is well melted. Take it out and let it cool then serve!!
