Instructions

Step 1
Use Kefalotiri or Kaseri cheese. Kaseri is milder and melts quickly like a mozzarella. I prefer Kefalotiri. 1/2 inch thick slice of cheese into egg wash, then flour. Heat skillet to medium/ medium low. Add 1 1/2 tablespoon vegetable oil and gauge oil CU lime once you add the cheese. Add cheese and look for a golden to dark golden underside and flip. If flaming, increase heat at the last 30 seconds to get pan hot. IMPORTANT!!!!! If flaming hold pan well above head, and be sure for enough head room to ceiling. Pour one shot vodka or brandy and quickly light at the edge of the pan. Fire will burn off quickly but douse with fresh lemon regardless. Cut into bites and serve with pita or bread.
