⅓ cupred wine vinegar
1lemon
Juice of
1 tspDijon Mustard
2garlic cloves
½ tspdried oregano
¼ tspsalt
¼ tspblack pepper
½ cupolive oil
Couscous with Greek Dressing
1 ½ cupsIsraeli pearl couscous

1 tspGreek seasoning

¼ cupGreek Dressing

Instructions
Greek Dressing
Step 1
Combine all ingredients and whisk well
Couscous with Greek Dressing
Step 2
Cook couscous according to package directions, combine with 1/4 cup Greek Dressing recipe and 1 tsp Greek Seasoning. Set aside.
Cast Iron Salmon
Step 3
Heat cast iron pan over medium heat. Mix olive oil and Greek seasoning in a small bowl, whisking well. Brush seasoning and oil all over first fillets, coating well
Step 4
Starting with skin side up, sear fish (in batches, if necessary) for 1 to 2 minutes on medium heat until brushed browned. Depending on the cut, you may want to sear the sides as well.
Step 5
Lower heat to medium low and cook skin side down for 5-7 minutes, until fish flakes with a fork or reaches an internal temperature of 140°
Step 6
Remove from heat and sqeeze lemon wedges over fish. Set aside.
Vegetable Bowls and Dip
Step 7
Toss spinach and couscous, adding more Greek Dressing, as desired. Divide among 6 bowls
Step 8
Top with salmon, cucumber, tomatoes, avocado, onion, and tzatziki dip.
Step 9
Serve with additional lemon wedges and dressing, as desired.
