Smoked Salmon Salad with Lemony Baked Courgettes and Caper Berries

Instructions

Step 1
Preheat oven to 200 degrees fan. Add the courgettes, capers and the ½ tbsp of oil (don’t use more otherwise they go soggy) to an oven proof dish. Season with the salt, pepper and oregano. Give it a mix so the everything is coated. Bake in the oven for 30 mins.
Step 2
To assemble the salad, add the leaves to a bowl. Slice the capers discarding the stalks. Spoon them over the salad along with the the courgettes and finish off with torn pieces of salmon. Enjoy 😊
