For the Marinate
Instructions
Step 1
Clean beef shank with water thoroughly for a few minutes, put beef shank in a pot filled with water, add in scallion, smashed ginger, Szechuan peppercorn and cooking wine, bring to boil and continue cooking for 10 minutes or so.
Step 2
Remove beef shank from pot and soak in cold water for 10 minutes.
Step 3
Start with a new pot with water, place beef shank in the water with smashed ginger, bay leaves, dried chili, Amounmum Tsao-ko, brown sugar, dark soy sauce, light soy sauce, oyster sauce. Simply bring to boil and continue cooking on medium or low heat for 3 hours. Remove from the heat (soak overnight is preferred)
Step 4
Bring a pot of water to boil, add noodles in the water to cook. Further put green vegetables in the noodle to cook until cooked.
Step 5
Pour appropriate amount of marinate beef broth in a bowl, remove noodles and vegetables form the pot. Top with braised beef, green onion and chili sauce(optional) . Serve warm.
