Ingredients

2sweet potatoes
large

2cans black beans

1sweet onion
medium

3cloves garlic

3 tablespoonsolive oil

1 x 28 ouncecan crushed tomatoes

1 x 8 ouncecan of tomato sauce

2 tablespoonstomato paste

2 tablespoonscumin seeds

2 tablespoonschili powder

½ teaspooncayenne pepper

1 tablespoonkosher salt

1 teaspooncracked black pepper

Instructions
Step 1
Peel and dice potatoes into equal bite sized pieces. Dice onion and mince garlic.
Step 2
In a large pot heat olive oil on medium. Add cumin seeds and let heat until fragrant.
Step 3
Add onion and garlic to oil. Sauté until onions are translucent.
Step 4
Add diced potatoes and brown until tender. Season lightly with salt.
Step 5
When potatoes are tender add black beans, crush tomatoes, tomato sauce and tomato paste. Add remaining spices and seasoning. Cover and let simmer until potatoes are soft (about 20 minutes). Continue to season at taste during simmering process until you’re happy with the taste.
Step 6
Top with chopped cilantro to make it pretty and serve.

Delicious topping suggestions: shredded cheddar cheese, sour cream, diced green onion, fresh jalapeño, lime, avocado
Step 8
Option: If you want a protein ground Turkey works very well. Brown after sautéing the onions and garlic, but before adding the potatoes.
