Instructions

Step 1
Quick soak beans by washing them, Placing in a pot with water, boiling for 2 minutes and then turning off and covering to let sit for 1 hour.
Step 2
Dice or food process carrots (1 or 2), celery, garlic, onion, some peppers and sauté in oil until softened.
Step 3
Add to pot with beans and make sure beans are covered with an inch or so of water
Step 4
Cook until beans are softened and then salt and season. Add diced tomatoes, tomato paste, cocoa powder, sugar, miso paste. Cook until a little thickened
Step 5
If need to thicken more: tomato paste, corn starch mixed with water, immersion blend some, simmer some water off
