Here’s what you’ll need:
• 8 oz. Fresh mozzarella pearls
• 12 oz. Cherry tomatoes
• 1/2 cup fresh basil leaves
• 12 oz.
Rotini pasta
• 1/4 cup Extra virgin olive oil
• Balsamic glaze, to taste
• Salt and pepper, to taste
Here’s how to make it:
1. Bring a large pot of water to boil and cook the pasta per box instructions. Drain the liquid, rinse the pasta and set aside. (Note: when making warm pasta dishes, never rinse the pasta. The starches released from the pasta while cooking naturally help thicken sauces and make them silky smooth. But for cold pasta salads, when left unrinsed, the starchy coating can make the pasta gummy and clump together. Rinsing keeps the pasta loose for the salad.)
2. Cut the cherry tomatoes in half. You may also cut the mozzarella pearls in half or keep them as is.
3. In a large mixing bowl, add the pasta, cherry tomatoes, mozzarella, fresh basil, extra virgin olive oil and balsamic glaze. Toss to coat and season with salt and pepper. If making ahead, keep the dressing on the side until you’re ready to serve.
