I have worked in a lot of restaurants. I borrowed techniques and recipes to perfect my chunky mashed potatoes.

Instructions
Step 1
Peel potatoes if you dont like them. Cut potatoes in half then in half again them into 3 pieces, thus should be about 12 pieces. Add to a large pot. Do this with all potatoes.
Step 2
Small dice onion and smash garlic. Add to pot along with Seasonings and herbs. Add water to barely cover potatoes.
Step 3
Bring to a boil. Once it starts boiling boil for 12 minutes or until potatoes are fork tender. Drain all liquid.
Step 4
Add back to the pot or a large bowl and the butter. Mash until butter is melted and combined. Add salt and pepper, just a little bit. Add 1/2 the cream and mash until its absorbed. Add cream cheese and Asiago.
Step 5
Taste and adjust flavor. If you like it creamier add more heavy cream. If it's too thick but the flavor is good add milk until it's the consistency you like. Add salt and pepper if needed. Serve with any entree. I like to add fresh parsley or green onions on top with a small pad of butter
