Lady Boss One Pan Enchiladas

1 pound reduced fat ground turkey
1 15-ounce can black beans, rinsed and drained
1-2 jars enchilada sauce depending on your taste and spicy-ness
6 corn tortillas, cut in half then sliced into thin strips
1 cup fat free cheddar cheese, grated
1 diced red onion
1 grated zucchini squash
2 tsp garlic salt
(optional) guacamole

Ingredients

1 poundlean turkey mince

1 x 15 ouncecan black beans
rinsed and drained
1 jarsenchilada sauce
depending on your taste and spicy-ness
6corn tortillas
cut in half then sliced into thin strips
1 cupfat free cheddar cheese
grated
1red onion
diced
1zucchini squash
grated
2 tspgarlic salt
optional, guacamole
Instructions
Step 1
1. Brown ground turkey in a large skillet over medium heat with diced onion.
Step 2
2. Add grated zucchini toward the end for added flavor and moisture. - season with garlic salt and pepper.
Step 3
3. Add the rinsed and drained black beans and enchilada sauce.
Step 4
4. Cover and reduce heat to low. Let simmer for 10 minutes.
Step 5
5. Add sliced tortilla strips, stir well, top with cheese and cover.
Step 6
6. Let mixture simmer 5-10 more minutes until cheese is melted.
Step 7
Top with green onion or sliced avocado.
