Grilled Vegetable Pesto Panini
12oz ciabatta loaf (or other crusty bread)
4oz basil pesto
4oz sun dried tomato pesto
4oz shredded mozzarella cheese
1 bell pepper, cut into thirds
1/2 large zucchini, sliced lengthwise
4 slices eggplant
1oz red onion, thinly sliced
1/2 cup arugula
Salt and pepper

1. Season veggies with olive oil, salt and pepper and grill over medium heat until tender and slightly charred, about 2-3 minutes each side (alternatively, you can roast veggies in the oven).
2. Assemble the sandwich by slicing your ciabatta in half and spreading basil pesto on one half and sun dried tomato pesto on the other half. Add cheese to the bottom piece then top with grilled veggies and onion. Season with salt and pepper and then add arugula and close the sand which.
3. Grill sandwich on a panini press until bread is toasted and the cheese has melted. Cut panini into sections and enjoy.
