Instructions

Step 1
Preheat your waffle iron according to its instructions.
Step 2
In a blender or food processor, grind the oats until they reach a flour-like consistency.
Step 3
Add the baked sweet potato flesh, ripe bananas, almond milk, maple syrup, melted coconut oil, and vanilla extract to the blender. Blend until the mixture is smooth.
Step 4
Add the baking powder, cinnamon, and a pinch of salt. Blend again until all the ingredients are well incorporated.
Step 5
Grease the waffle iron with a bit of coconut oil to prevent sticking. Pour the batter into the waffle iron, being careful not to overfill it.
Step 6
Close the waffle iron and cook according to your waffle iron's instructions, or until the waffles are golden brown and crispy. This will usually take about 5-6 minutes.
Step 7
Carefully remove the waffle and repeat with the remaining batter.
Step 8
Serve the waffles warm with your favorite toppings such as fresh fruits, nut butter, or an extra drizzle of maple syrup.
