Instructions

Step 1
Bring a saucepan of water to the boil, then gently lower in the eggs and boil for 8 minutes for yolks that are still just soft. Remove from the pan and run under cold water before peeling.
Step 2
While the eggs are cooking, melt the coconut oil in a large frying pan over a high heat. Slide in the chicken strips and fry for about 8 minutes, or until totally cooked through. Check by slicing into one of the larger pieces to make sure the meat is white all the way through, with no raw pink bits left.
Step 3
Place the mayonnaise, anchovies, garlic, parmesan and 3 tablespoons of warm water in a small blender and blitz until you have a smooth dressing.
Step 4
To serve, pile up all the fresh veg on your plate and top with the cooked chicken. Slice the eggs in half and place on top of the chicken. Drizzle with the dressing and scatter the whole lot with pine nuts.
