Ingredients

Curry paste

125gdry-roasted unsalted peanuts

2shallots

5garlic cloves

1red chilli

5 cmginger
piece

1lemongrass stalk

1 tspcoriander

½ tspground cumin

½ tspcumin seeds

½ tspground nutmeg

½ tspground cinnamon

⅛ tspcloves

¼ tspground cardamom

2 Tbspfish sauce

1 tspshrimp paste

1 tsplight brown sugar

1 Tbspcoconut milk
For the curry
Instructions
Step 1
Whizz the paste ingredients in a blender
Step 2
Preheat oven to 160 (Gas 3)
Step 3
Add 2 tbsp of coconut milk to the pan and 4 tbsp of the curry paste and fry for 1 min, then add the chicken and fry until it is coated in the paste.
Step 4
Stir in the rest of the coconut milk, the potatoes, the onion, lime leaves, cinnamon, tamarind paste, sugar, fish sauce, half of the peanuts, and 200ml of water. Bring to a simmer and then cover and transfer to the oven in a lidded dish. Cook for 2 hours.
Step 5
Serve with rice
