Instructions
Step 1
In a bowl, to your cut chicken add salt, garam masala, smoked paprika, and a touch of cayenne. Also, add some minced garlic and grated ginger. Finish with some yogurt, and mix everything until thoroughly incorporated. Marinate until use or overnight, covered, in the fridge.
Step 2
In a medium-high heat pan coated with olive oil, add your chicken and cook it on all sides. Make sure to get some browning. Remove the chicken in a separate bowl.
Step 3
Add a cube of butter along with some thinly sliced red onion, minced garlic, and minced ginger.
Step 4
Cook until onions are soft and add salt + the same seasonings from earlier.
Step 5
Add a can of diced tomatoes. Cook on medium-low heat, stirring constantly, until thicker.
Step 6
Add cream and combine with the tomato sauce.
Step 7
Optionally, you can blend it using a hand blender, but I personally prefer leaving some chunks in there.
Step 8
Add your chicken back and simmer for 5 more minutes.
Step 9
Finish with fresh cilantro, and serve with rice or naan, or whatever you want really.
