ounce, drained and rinsed
0.5cucumber
diced
0.5red bell pepper
or yellow, diced
200gcherry tomatoes
halved
0.5red onion
diced
½ cupparsley
chopped
1garlic clove
small, minced, optional
¼ tspred pepper flakes
more to taste
2 Tbspfresh lemon juice
1 ½ Tbspextra virgin olive oil
salt
to taste
pepper
to taste
30gvegan cheese
Instructions
Step 1
Add all salad ingredients to a large bowl.
Step 2
Mix all dressing ingredients in a small bowl or jar.
Step 3
Pour the dressing over the salad, stir everything and check if you want to add more salt, pepper, red pepper flakes or lemon juice. Enjoy!
