Instructions
Step 1
Cut cauliflower into florets.
Step 2
Mix cauliflower with oil, salt, pepper, paprika, and cumin until well coated. Roast at 200C/400F for 20 minutes.
Step 3
Slice onion and fry in a pan with oil until softened.
Step 4
Add tomato paste, sundried tomatoes and garlic to pan and sauté until soft.
Step 5
Add canned tomatoes, hummus, salt, and pepper to pan and heat for a few minutes.
Step 6
Cook pasta and set some pasta water aside.
Step 7
Add pasta and roasted cauliflower to pan with sauce. Stir to combine and top with parsley.
