Instructions
Step 1
Place the milk, sugar and one of the cardamom pods in a small pot. Stir intermittently over medium-high heat.
Step 2
Turn it off once the sugar has dissolved and it’s come to a low boil.
Step 3
Simultaneously, in a heavy-bottomed pan, melt the ghee and add the semolina, along with the second cardamom pod.
Step 4
Dry roast this until it turns a light brown colour and emits a mild, sweet aroma. (~10 mins)
Step 5
Lower the heat to low.
Step 6
Now, add the hot milk mixture to the semolina, stirring constantly. (It will splatter!)
Step 7
Keep stirring over a low heat until the water has been absorbed and there are no lumps.
Step 8
Take off the heat a bit before it has thickened to your desired consistency.
Step 9
Add the raisins and stir to combine.
Step 10
Place in ramekins to cool/set slightly for 1-2 minutes.
Step 11
Release onto a bowl/plate and garnish (nuts for guests. Try seeds?)
