Step 1
cook the rice and stir in 1 tsp of seasame oil
Step 2
heat the peanut oil in a frying pan over a high heat
Step 3
cook the mince for 6-8 minutes
Step 4
add the spring onion and 2 tsp siracha and cook for 2 minutes
Step 5
stir in the soy sauce and half of the lime juice
Step 6
steam the pak choi for 4-5 minutes
Step 7
divide the rice between two bowls and top with the carrots, pak choi and spicy beef
Step 8
in a small bowl, stir the remaining lime juice, sesame oil and siracha
Step 9
drizzle over the bowls and scatter with sesame seeds before serving
