FRYING PAN PIZZA - SPINACH + CHICKEN

Instructions

Step 1
Preheat the grill to high.
Step 2
Place the pizza base ingredients in a mixing bowl and mix together with a spoon. Use your hands to bring everything together into a dough. Tip the dough out onto a floured work surface and knead for 2 minutes.
Step 3
Have a large non-stick frying pan with a heatproof handle to hand. Split the dough in two with a knife. Making each dough portion into a circular disc then, using your fingertips, pat the dough out into a thin round large enough to fit into your frying pan. Lift the base into the frying pan. You can get your little ones to help with this.
Step 4
Now the base is ready to cook. Top it with your chosen topping and cook for about 5 minutes over a medium heat, lifting up the edge of the pizza to check the base has a good golden colour before removing from the heat.
Step 5
Once the base is cooked on the underside and you've checked it has a good colour, slide the frying pan under the hot grill for 3-4 minutes, or until the cheese is tinged golden and bubbling. Repeat the process with the second pizza base.
Step 6
Put the washed spinach in a microwavable bowl, cover and zap on high for 2 minutes, or until well wilted, or wilt in a dry pan. Place the spinach in a sieve and press it with a spoon to remove as much water as possible.
Step 7
Roughly chop the wilted spinach and mix it in a bowl with the cream cheese, garlic granules and some salt and pepper.
Step 8
Top the pizza base in the frying pan with the spinach, followed by the chicken and sprinkle over the cheese.
