Instructions

Step 1
Wash the old tofu you bought, absorb the water with kitchen paper to prevent oil from splashing when frying, and then cut it into bite-sized slices with a thickness of about 0.5-1cm
Step 2
Pour 1-2 tablespoons of cooking oil into a frying pan over the bottom of the pan, cook until five or six percent hot (about 160°C), put sliced tofu in heat and fry until both sides are charred, and then fry it vertically on the edge, so that a hard shell is formed all around· If you like a soft and juicy texture, fry until the tofu has a thin hard shell on the surface. If you have an oven at home, you can spread a layer of oil on the sliced old tofu and send it to the oven to bake at 200°C for 15-20 minutes, during which you remember to observe the coloring

Add a little base oil to the pan, stir-fry 1 star anise, 1 fragrant leaf, 1 teaspoon cumin, 2-5 dried chili pepper segments, add 1 teaspoon of sweet noodle sauce and stir-fry, add the fried tofu and stir-fry evenly
Step 4
Add 200-300ml of hot water to the tofu, add 1/2 tbsp light soy sauce, 1/2 tbsp maltose, cover and marinate for 15 minutes, then turn on high heat to collect the juice
Step 5
Add 1 tablespoon of cooking oil to a wok, heat it up, add 1/2 tablespoon of Pixian bean paste, 1 teaspoon of thirteen spices, 1/2 teaspoon of Sichuan peppercorn powder, stir-fry pepper oil over medium-low heat· Then pour in the marinated dried tofu and stir-fry well, so that each piece of dried tofu is coated with sauce, and sprinkle with cumin powder and cooked white sesame seeds before cooking
