Instructions

Step 1
In a large stock pot or Dutch Oven, melt the beef tallow or cooking fat of your choice over medium-high heat.

Add onion and sauté 3 minutes.

Add the Italian sausage and cook for 5-7 minutes until browned.
Step 4
Add the Italian seasoning and crushed red pepper.

Saute 3 minutes.

Add the garlic.
Step 7
Stir for 1 minute until fragrant.
Step 8
Add the chicken broth and potatoes.
Step 9
Bring your soup to a boil.
Step 10
Reduce heat, cover and simmer 10 minutes.
Step 11
Add the kale and coconut milk and simmer an additional 5 minutes until potatoes can be easily pierced with a fork wid kale is just barely tender.
Step 12
Add salt and pepper to taste.
