Ingredients
4 servings
½ cupunsalted butter
¾ cupcelery
chopped fine
¾ cuponion
chopped fine
½ cupcarrot
grated fine and chopped
1 ½ tspgarlic
minced
⅓ cupflour
¾ cupheavy whipping cream
¾ cupmilk
4 cupschicken broth
or fresh chicken stock
1 ½ cupschicken breast
cooked
¾ cupsfresh spinach
julienne cut
16 ozgnocchi
½ tspdried rosemary
¼ tspblack pepper
or half
¼ tspwhite pepper
or not
½ tspsalt
Instructions
Step 1
Melt butter in a large heavy sauce pan
Step 2
Add onions, celery, carrots, and garlic and saute until soft
Step 3
Add flour, mixing well. Cook for 3-4 minutes, stirring frequently
Step 4
Add heavy whipping cream, milk, and chicken broth. Mix well
Step 5
Cook and stir until mixture thickens and comes to a boil
Step 6
Reduce heat and stir in chicken, spinach, gnocchi and remaining seasonings. Adjust seasonings to taste
Step 7
Cook over low heat 8-10 minutes until gnocchi becomes tender. Or you can transfer ingredients to a crock pot and cook on low for 1 1/2 hours
Step 8
Serve with hot garlic bread sticks
