Instructions
Step 1
Heat oil in a large stock pot. Cook onion and pepper until soft and caramelized.
Step 2
Add garlic. Cook until fragrant, about 2 mins.
Step 3
Add meat and break up into small chunks. Season with salt, pepper, garlic powder, sazon, cumin, cayenne. Fully cook on medium to high heat and taste for flavor.
Step 4
Add potatoes and mushrooms and cook covered on medium to low heat, stirring occasionally to avoid burning, until potatoes are soft. About 30 mins.
Step 5
Serve on tortillas with optional toppings: cilantro, onion, sour cream, lime, jalapenos
