This distinctive Chinese classic with its creamy consistency is a winter warmer that takes less than 30 minutes to make. Takeaway chicken and sweetcorn soups may be very high in sodium or sugar however in this recipe neither salt nor sugar has been added. As well as being very low in energy density, one portion of this soup also provides a significant proportion of the recommended daily protein intake. For non-meat eaters, this recipe also works well with a vegetarian chicken substitute.

In a large pan, heat the stock over medium heat and add the chopped garlic, spring onions, ginger and chicken breast. Simmer for 15 minutes until the chicken has thoroughly cooked through. Remove the chicken and allow it to cool. Mix the corn flour with two teaspoons of water to form a liquid then add this, the Worcestershire sauce and the fresh sweetcorn kernels to the pan. Also, shred and add the cooled chicken. As the soup begins to thicken, drizzle in a beaten egg while stirring the soup, so the egg creates thin strands. Season with black pepper and serve.
