Ingredients
2 servings
150glong grain rice
uncooked
1 Tbspsunflower oil
1garlic clove
roughly chopped
300gboneless skinless chicken breasts
or thighs, cut into chunks
1red pepper
deseeded and diced
½ Tbspcurry powder
or paste
0.5 bunchspring onions
thinly sliced
1 Tbspsoy sauce
plus extra to serve
chilli oil

25groasted peanuts
roughly chopped
2 Tbspfresh coriander
roughly chopped
sriracha
optional
Instructions
Step 1
Cook the rice in salted boiling water for 12-15 minutes. Drain well. Meanwhile, heat the oil in a wok or large frying pan.
Step 2
Fry the garlic, chicken and pepper for 10 minutes, stirring, until golden. Add the curry paste or powder and cook for 1 minute. Stir in the rice and spring onions and cook for 5 minutes until piping hot. Stir in the soy sauce.
Step 3
Heat a separate frying pan with a little oil (any you like, e.g. sesame, chilli, etc.) and fry an egg per portion until the white is set and the yolk is still slightly runny.
Step 4
Serve the fried rice topped with the chopped peanuts, coriander, a fried egg, a little extra soy sauce and a drizzle of sriracha, if desired. Serve immediately.
