Ingredients
4 servings
1 Tbspvegetable oil
500gchicken breasts
cut into thin strips
1red onion
chopped
300mlpassatta
3 Tbsptomato puree
2 tspfajita seasoning
250gcheddar cheese
grated
8corn tortillas
Accompaniments
Instructions
Step 1
Preheat the oven to fan 180°.
Step 2
Fry the chicken and onions until the chicken is browned.
Step 3
Add the fajita seasoning and stir for 1 min.
Step 4
Pour two thirds of the passata and the tomato puree into the pan and stir for 2 mins.
Step 5
Add half the cheese and stir until it melts into the sauce, then take off the heat.
Step 6
Grease up a baking tray with some oil
Step 7
Divide the mixture into wraps, roll the wrap into a cylinder, and turn till the fold is at the bottom, then place in the baking tray.
Step 8
Pour the remaining passata over the top of the enchiladas then sprinkle the remainder of the cheese on top.
Step 9
Put the baking tray into the oven for 20mins.
Step 10
Serve with your choice of accompaniments.
